Loaded Taco Potato Soup

A comforting blend of creamy potatoes, savory ground beef, and zesty taco seasoning, topped with cheddar cheese.

Ingredients

  • 1 lb Ground Beef
  • 23 medium Potatoes, diced
  • 2 tbsp Taco Seasoning
  • 1 cup Cheddar Cheese
  • 4 cups Broth (chicken, beef, or veggie)
  • 1 Onion, chopped
  • 23 cloves Garlic, minced
  • 1/2 cup Sour Cream
  • Toppings: Chopped cilantro, diced avocados, jalapeños, tortilla chips

Instructions

  1. Brown the Ground Beef in a large pot with olive oil over medium heat for 5-7 minutes. Drain excess fat.
  2. Add the Aromatics: onions and garlic, and sweat for 3-4 minutes.
  3. Incorporate the Spices by sprinkling taco seasoning and mixing well.
  4. Introduce the Potatoes and broth, cover and bring to a boil. Simmer for 15-20 minutes.
  5. Creamy It Up: Mash some of the potatoes, then stir in cheddar cheese until melted.
  6. Stir in the finishing touches with sour cream and lime juice, simmer for 5 more minutes.
  7. Serve the soup hot, topped with extra cheese and your choice of toppings.

Notes

For a vegetarian version, replace ground beef with black beans and use vegetable broth.
