Spinach Artichoke Soup

A warm and creamy Spinach Artichoke Soup that combines vibrant spinach and tender artichokes, perfect for chilly evenings.

Ingredients

  • Fresh Spinach (4 cups)
  • Canned Artichoke Hearts (1 can, drained)
  • Cream Cheese (8 oz)
  • Parmesan Cheese (½ cup, grated)
  • Garlic (2 cloves, minced)
  • Onion (1 medium, diced)
  • Chicken or Vegetable Broth (4 cups)
  • Olive Oil (2 tablespoons)
  • Salt and Pepper to taste

Instructions

  1. Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 5 minutes, until the onion is translucent.
  2. Add the Broth: Pour in the chicken or vegetable broth and bring it to a gentle simmer for about 10 minutes.
  3. Add Spinach and Artichokes: Toss in the fresh spinach and the drained artichoke hearts. Cook for 4–5 minutes until the spinach wilts.
  4. Cream It Up: Stir in cream cheese and Parmesan until smooth. Add more broth if needed to reach desired consistency.
  5. Season and Blend: Taste soup, season with salt and pepper. Use an immersion blender for a silky texture, if desired.
  6. Serve! Let it simmer for another 2-3 minutes before serving.

Notes

Garnish with extra Parmesan and a drizzle of olive oil. Serve with crusty bread or homemade crackers.
