Turkey Vegetable Soup

A heartwarming Turkey Vegetable Soup loaded with fresh veggies and aromatic herbs, perfect for chilly days and made from leftover turkey.

  • 2 cups leftover turkey, shredded or diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup mixed vegetables (fresh or frozen)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken or turkey broth
  • 1 bay leaf
  • 1 teaspoon fresh thyme (or 1/3 teaspoon dried)
  • 1 teaspoon fresh rosemary (or 1/3 teaspoon dried)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Prep your ingredients: Chop your vegetables into uniform pieces.
  2. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, stirring until translucent (about 3-5 minutes).
  3. Add the veggies: Toss in the chopped carrots, celery, and mixed vegetables. Sauté for another 5-7 minutes.
  4. Incorporate the turkey: Add in your turkey and stir to combine, letting it warm through.
  5. Pour in the broth: Add the broth and stir, raising the heat until the soup comes to a gentle boil.
  6. Season that soup: Toss in your herbs, bay leaf, and a pinch of salt and pepper. Let it simmer for about 20-30 minutes.
  7. Taste and adjust: After about 30 minutes, taste your soup and adjust seasonings as needed.
  8. Finish and serve: If using fresh parsley, stir it in just before serving.
