Homemade Turkey Vegetable Soup

  • 2 cups leftover turkey, shredded
  • 4 cups mixed vegetables (carrots, celery, green beans, corn, peas)
  • 68 cups turkey broth (or vegetable/chicken broth)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1/4 cup fresh parsley, chopped
  • 1 bay leaf
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Wash, peel, and chop your vegetables into bite-sized pieces.
  2. Sauté the aromatics: Heat olive oil in a large pot and sauté onions and garlic for 3-4 minutes until soft.
  3. Add mixed vegetables: Stir them into the pot and sauté for another 5-7 minutes.
  4. Pour in the broth: Add the turkey broth and bring to a gentle simmer.
  5. Add your turkey: Shred leftover turkey and stir into the pot, simmering for 20-30 minutes.
  6. Add herbs: Mix in thyme, parsley, and bay leaf, adjusting as needed.
  7. Season to taste: After simmering, season with salt and pepper, and add lemon juice if desired.
  8. Serve hot: Ladle into bowls and garnish with fresh herbs.

Notes

For added flavor, try using homemade broth. Feel free to add other vegetables like zucchini or spinach.
