One Skillet Salmon with Lemon Orzo

A delightful dish of perfectly seasoned salmon served atop a bed of fluffy lemon orzo, all made in one skillet for easy cleanup.

  • 4 skinless salmon fillets
  • 1 tsp salt (divided)
  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 cup dry orzo pasta
  • 1 tsp dried thyme
  • 3 cups low-sodium chicken broth
  • 5 ounces baby spinach
  • Juice from ½ lemon
  • ½ cup grated Parmesan
  • Freshly ground black pepper (for serving)
  • Chili flakes (for serving)

Instructions

  1. Prep the salmon: Pat the salmon fillets dry and season with ½ teaspoon of salt, ½ teaspoon of black pepper, paprika, and garlic powder on both sides.
  2. Heat things up: In a large skillet over medium heat, add olive oil and butter until shimmering.
  3. Sear the salmon: Place seasoned salmon in the skillet, skin-side down, and cook for 4-5 minutes without moving. Flip and cook for an additional 3-4 minutes.
  4. Create the flavor base: In the same skillet, add chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another minute.
  5. Add the orzo: Stir in dry orzo and thyme, cooking for a minute to toast the pasta slightly.
  6. Pour in the broth: Gradually add chicken broth and stir. Bring to a gentle boil, then reduce heat to low.
  7. Add the spinach: After about 10 minutes, stir in baby spinach and lemon juice. Cover for a minute.
  8. Return the salmon: Nestle the salmon back into the skillet, sprinkle with Parmesan, and cover briefly to melt the cheese.
  9. Serve and enjoy: Finish with black pepper and chili flakes on top.

Notes

For an elegant presentation, plate the orzo first, then top with salmon. A sprinkle of extra Parmesan and a lemon slice adds a nice touch.
