Peach Breakfast Bake

A delightful and healthy breakfast bake made with cottage cheese, fresh peaches, and rolled oats, perfect for summer mornings.

  • 2 cups cottage cheese
  • 3 large eggs
  • 2 medium ripe peaches, peeled and diced
  • 1/2 cup rolled oats or almond flour
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp ground ginger or cinnamon
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking dish by greasing it lightly with cooking spray or coconut oil.
  3. Mix the cottage cheese, eggs, honey (or maple syrup), and vanilla extract until smooth and creamy.
  4. Incorporate the rolled oats (or almond flour), ground ginger (or cinnamon), and baking powder gently into the wet mixture.
  5. Add the diced peaches, folding them into the batter evenly.
  6. Pour the mixture into the prepared baking dish and spread it evenly.
  7. Bake for about 30–35 minutes until golden and a toothpick comes out clean.
  8. Cool for about 10 minutes before serving.

Notes

Serve warm with a dollop of Greek yogurt or ice cream, and drizzle with honey or maple syrup for extra sweetness.
