Sweet Peach Cookies

Delicious and inviting peach cookies that bring a taste of summer to any occasion.

Ingredients

  • 2 1/8 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 large ripe peaches (peeled, pitted, and cut into 1/4-inch pieces)
  • 1/3 cup peach preserves
  • 3 tablespoons sanding sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a baking sheet lined with parchment paper.
  3. Mix together the flour, salt, baking soda, and cinnamon in a medium bowl.
  4. Cream the butter, granulated sugar, and brown sugar until light and fluffy.
  5. Add the egg and vanilla extract; mix until combined.
  6. Combine the dry ingredients with the wet ingredients until just combined.
  7. Fold in the peaches and peach preserves.
  8. Scoop rounds of dough onto the prepared baking sheet, spacing them apart.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Serve warm with a scoop of vanilla ice cream for an extra treat!
