Pizza Soup

A comforting bowl of Pizza Soup that brings all the familiar flavors of pizza into a delicious, hearty soup.

  • 1 pound Italian sausage
  • 1 cup diced pepperoni
  • 28 ounces canned diced tomatoes
  • 1 to 1.5 cups shredded mozzarella cheese
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 4 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat about 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Then, add the minced garlic and stir for another minute.
  2. Brown the sausage: Push the onions and garlic to the side and add the Italian sausage directly into the pot. Break it into smaller pieces as it cooks for about 7-10 minutes.
  3. Add the tomatoes and broth: Once the sausage is cooked, pour in the diced tomatoes and chicken or vegetable broth. Stir well.
  4. Season it up: Stir in the Italian seasoning along with a pinch of salt and pepper. Let the soup come to a gentle simmer for about 15-20 minutes.
  5. Incorporate the pepperoni: Add the diced pepperoni to the pot and let it simmer for an additional 5 minutes.
  6. Final touches & cheese: Before serving, stir in the shredded mozzarella cheese. Allow it to melt into the soup.
  7. Serve hot: Ladle the soup into bowls and garnish with fresh basil or additional cheese as desired.
