Dill Pickle Ranch Smash Chicken Tacos

  • 1 pound Ground Chicken
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 8 small Tortillas
  • 1 cup Shredded Mozzarella or Jack Cheese
  • 1/2 cup Chopped Dill Pickles
  • 2 tablespoons Pickle Brine (Optional)
  • 1 cup Shredded Cabbage
  • 1/2 cup Cottage Cheese

Instructions

  1. Prepare your ingredients. Chop the dill pickles, shred the cabbage, and measure everything out.
  2. Cook the ground chicken in a skillet over medium heat, seasoning with garlic powder, paprika, salt, and pepper until golden—about 5-7 minutes.
  3. Add the chopped dill pickles and pickle brine to the chicken, cooking for an additional 2-3 minutes.
  4. Warm your tortillas in a dry pan for about 15-30 seconds on each side.
  5. Make the cottage cheese dressing by blending with ranch seasoning and a squeeze of lemon.
  6. Assemble the tacos with the filling, shredded cheese, cabbage, and drizzle the cottage cheese dressing on top.
