Stuffed Pepper Soup

A warm and comforting soup that brings all the flavors of stuffed peppers in a cozy bowl.

  • 1 lb Ground Beef
  • 3 Bell Peppers, diced
  • 1 cup Rice (white or brown)
  • 1 can Canned Diced Tomatoes
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef Broth
  • 1 tsp Oregano
  • Salt and Pepper to taste
  • Crushed Red Pepper Flakes (optional)

Instructions

  1. Brown the ground beef in a large pot over medium heat for about 5-7 minutes.
  2. Sauté the chopped onion and minced garlic for 3-4 minutes until translucent and fragrant.
  3. Introduce the diced bell peppers and cook for an additional 5 minutes.
  4. Add the canned diced tomatoes and beef broth, stirring well.
  5. Season it up with oregano, salt, pepper, and optional crushed red pepper flakes.
  6. Stir in the rice and let the soup come to a boil.
  7. Simmer the soup on low heat for 20-30 minutes or longer if using brown rice.
  8. Check the consistency, adding more broth or water if too thick.
  9. Final touches: Adjust seasoning and serve hot.

Notes

Serve garnished with fresh parsley or a dollop of sour cream. Pairs well with crusty bread.
