Stuffed Pepper Soup

A comforting and flavorful soup combining all the beloved tastes of stuffed peppers in one bowl.

Ingredients

  • 1 lb ground beef
  • 3 bell peppers (any color, diced)
  • 1 cup rice (white or brown)
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef or vegetable broth
  • 1 tsp Mexican chili powder
  • 1 tsp Italian seasoning
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Prep your ingredients: chop onion and garlic, and dice the bell peppers.
  2. Brown the meat: In a large pot, heat olive oil and cook ground beef until no longer pink.
  3. Add aromatics: Stir in chopped onions and garlic, sautéing until soft.
  4. Incorporate peppers and rice, cooking for 2-3 minutes.
  5. Pour in diced tomatoes and broth; season with spices.
  6. Simmer on low heat for 20-30 minutes until rice is tender.
  7. Finishing touches: adjust seasoning as necessary and serve hot.

Notes

This soup is perfect for meal prep; leftovers can be frozen for up to 3 months.
