Heavenly Nectarine Muffins

Delightful nectarines muffins that capture the essence of summer in each fluffy bite.

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced nectarines
  • 1/2 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup flour (for topping)
  • 1 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
  2. Mix the flour, sugar, baking powder, cinnamon, and salt in a large mixing bowl.
  3. Combine the melted unsalted butter, milk, eggs, and vanilla extract in another bowl.
  4. Merge the wet ingredients into the dry mix, stirring gently until just combined.
  5. Gently fold in the diced nectarines.
  6. Prepare the topping by combining brown sugar, flour, and a dash of cinnamon.
  7. Fill the muffin cups with batter and sprinkle the brown sugar topping over each muffin.
  8. Bake for about 18-22 minutes, or until a toothpick comes out clean.
  9. Cool the muffins for 5 minutes, then drizzle with glaze before serving.

Notes

For a twist, try adding nuts or swapping nectarines for other fruits.
