Pumpkin Chicken Soup

A cozy and comforting pumpkin chicken soup perfect for autumn evenings.

  • 1 pound Chicken (boneless, skinless)
  • 2 cups Pumpkin puree
  • 1 Onion (yellow or white)
  • 3 cloves Garlic (fresh)
  • 1 cup Heavy cream
  • 2 teaspoons Sage (fresh or dried)
  • 4 cups Chicken broth
  • Olive oil (for sautéing)
  • Salt and pepper (to taste)

Instructions

  1. Prep your ingredients by chopping the onion and mincing the garlic.
  2. In a large pot over medium heat, add olive oil and sauté the onions until translucent.
  3. Then, add the minced garlic and sauté for another 1-2 minutes.
  4. Next, add cubed chicken, seasoning lightly with salt and pepper, and sear for 5-7 minutes.
  5. Mix in the pumpkin puree, stirring to coat all ingredients.
  6. Pour in chicken broth, bring to a simmer, and let bubble gently for 20 minutes.
  7. Finally, stir in heavy cream and sage, warming through without boiling.
  8. Optionally, blend for a silkier texture or leave it chunky.

Notes

Serve topped with a drizzle of cream and a sage leaf. Pair with crusty bread or salad.
