Beef Taco Soup

A hearty and warm Beef Taco Soup packed with ground beef, beans, corn, and tomatoes, perfect for gatherings or a cozy night in.

Ingredients

  • 1 lb lean Ground Beef
  • 1 can Black Beans, rinsed
  • 1 can Kidney Beans, rinsed
  • 1 cup Sweet Corn, frozen or fresh
  • 1 can Diced Tomatoes
  • 1 medium Onion, diced
  • 1 Bell Pepper, chopped
  • 3 cloves Garlic, minced
  • 2 tbsp Taco Seasoning
  • 4 cups Beef or Chicken Broth
  • Toppings: Sour Cream, Cheese, Cilantro, Avocado, Tortilla Chips

Instructions

  1. Brown the Beef in a large pot or Dutch oven over medium heat with olive oil until fully cooked; drain excess grease.
  2. Add the diced onion, chopped bell pepper, and minced garlic; sauté for 5-7 minutes until softened.
  3. Mix in the taco seasoning and coat the beef and veggies, cooking for about a minute.
  4. In with the canned tomatoes, beans, and corn, keeping everything in the pot.
  5. Add the broth, stir, and bring to a gentle boil.
  6. Simmer uncovered for 20-25 minutes over low heat.
  7. Taste and adjust seasoning as necessary.
  8. Serve into bowls and add your favorite toppings.

Notes

This soup can be made in advance and frozen for later use. Adjust seasoning to your taste!
