The Perfect Lemon Tart with Cookie Crust

  • 1 1/2 cups cookie crumbs
  • 1/3 cup unsalted butter, melted
  • 1/2 cup honey
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 cup blueberries (for topping)
  • Powdered sugar (for sprinkling)
  • Meringues (for topping, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cookie crumbs and melted butter. Stir until the crumbs are evenly moistened.
  3. Press the cookie mixture firmly into the bottom and sides of a 9-inch tart pan.
  4. Place the crust in the preheated oven and bake for about 10 minutes.
  5. In a mixing bowl, whisk together the honey and eggs until combined. Add in the fresh lemon juice and zest.
  6. Carefully pour the lemon filling into your cooled cookie crust.
  7. Bake the tart for about 20-25 minutes, until the filling is just set.
  8. Allow your tart to cool at room temperature, then chill in the fridge for at least an hour.
  9. Just before serving, sprinkle with powdered sugar and top with blueberries and meringues if using.
