Brown Sugar Roasted Butternut Squash

  • 1 Medium Butternut Squash (cubed)
  • 2 Tablespoons Olive Oil (or canola oil)
  • 3 Tablespoons Brown Sugar
  • 2 Tablespoons Unsalted Butter (or vegan butter)
  • 1 Teaspoon Ground Cinnamon
  • 1 Teaspoon Salt
  • 1 Teaspoon Ground Black Pepper (or white pepper)
  • 2 Tablespoons Fresh Parsley (optional, chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the butternut squash by peeling, halving, and cubing it into ½-inch pieces.
  3. Toss the cubed squash with olive oil until evenly coated.
  4. Season the squash with brown sugar, cinnamon, salt, and black pepper, then mix well.
  5. Lay the squash on a lined baking sheet in a single layer.
  6. Roast for 25-30 minutes, stirring halfway through for even browning.
  7. Add butter to the squash after 25 minutes and return to the oven for 5 more minutes.
  8. Finish with chopped parsley before serving.

Notes

For a different flavor, try substituting brown sugar with maple syrup or adding other veggies like Brussels sprouts.
