Candied Beets

A delightful recipe for candied beets that transforms this polarizing vegetable into a sweet and savory side dish.

Ingredients

  • 35 medium beets (cooked, peeled, and cut into 2″ pieces)
  • 3 tablespoons unsalted butter
  • 4 tablespoons brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon orange zest

Instructions

  1. Prepare the beets by scrubbing them, boiling until fork-tender, and cutting into 2-inch pieces.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the brown sugar to the melted butter and stir until dissolved.
  4. Toss in the beet pieces and coat them in the mixture.
  5. Season with salt and orange zest, stirring and cooking for another 5-8 minutes.
  6. Serve the candied beets on a platter, garnished with fresh herbs if desired.

Notes

These candied beets can be made ahead of time and are perfect alongside roasted meats or in salads.
