  • 1 cup sliced cherry tomatoes
  • 1/2 cup chopped cucumber
  • 1/2 cup shredded carrots or matchstick carrots
  • 1/3 cup diced or sliced red onion
  • 1 cup croutons
  • Grated parmesan cheese (optional)
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the greens by washing your romaine lettuce under cold water. Pat it dry and chop or tear it into bite-sized pieces.
  2. Slice and dice the veggies; halve the cherry tomatoes, cut the cucumber, and slice the red onion thinly.
  3. Whisk together the dressing by combining red wine vinegar, olive oil, Dijon mustard, maple syrup, oregano, garlic powder, salt, and pepper until emulsified.
  4. Assemble the salad by tossing the chopped romaine with the sliced veggies in a large bowl. Pour in the dressing and toss gently.
