  • 2 teaspoons instant yeast

  • 1 teaspoon instant coffee granules
  • 1 large egg (room temperature)
  • ½ teaspoon vanilla extract
  • 4 tablespoons unsalted butter (room temperature)
  • 5 tablespoons unsalted butter (for filling, room temperature)
  • 2/3 cup dark brown sugar
  • 2 teaspoons ground cinnamon
  • 1 ½ teaspoons instant coffee granules (for filling)
  • 2 oz cream cheese (softened)
  • 4 tablespoons unsalted butter (for frosting, softened)
  • 1 cup powdered sugar
  • 4 tablespoons heavy cream
  • ¾ teaspoon instant coffee granules (for frosting)

Instructions

  1. Prepare the Tangzhong: In a small saucepan, combine the ¼ cup all-purpose flour and ¾ cup warm water. Cook over medium heat until the mixture thickens. Set aside to cool.
  2. Mix the Dough: In a large mixing bowl, combine 3 ½ cups of flour, granulated sugar, instant yeast, and sea salt. Whisk together.
  3. Combine Wet Ingredients: In another bowl, mix together the warmed milk, instant coffee granules, egg, and vanilla extract. Whisk until well combined, then mix in the cooled Tangzhong.
  4. Bring It All Together: Gradually add the wet ingredients into the dry ingredients. Use a wooden spoon to combine until a dough starts to form.
  5. Knead: Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
  6. Let It Rise: Place dough in a greased bowl, cover, and let rise for 1-2 hours until doubled in size.
  7. Prepare the Filling: Combine softened butter, dark brown sugar, ground cinnamon, and instant coffee granules in a bowl.
  8. Roll Out the Dough: Punch down the risen dough, roll it out into a rectangle about ¼ inch thick.
  9. Spread the Filling: Evenly spread the filling on the dough, leaving a border around the edges.
  10. Roll It Up: Starting from one long side, roll the dough into a log and slice into 12 equal rolls.
  11. Second Rise: Arrange rolls in a greased baking dish, cover, and let rise for another 30-45 minutes.
  12. Bake: Preheat oven to 350°F (175°C) and bake rolls for 25-30 minutes until golden brown.
  13. Make the Frosting: Beat softened cream cheese and unsalted butter together until smooth, then mix in powdered sugar, heavy cream, and instant coffee until creamy.
  14. Frost and Enjoy: Let the rolls cool slightly, then generously spread cream cheese frosting on top before serving.
