Hearty Cowboy Soup

A delicious Cowboy Soup filled with savory ground beef, fragrant veggies, and a medley of spices, perfect for cozy gatherings.

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 4 cups beef broth
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup corn (frozen or canned)

Instructions

  1. Brown the Beef: In a large pot or Dutch oven over medium heat, add your ground beef and stir occasionally. Allow it to brown evenly, about 5-7 minutes, then drain any excess fat.
  2. Sauté the Aromatics: With the beef in the pot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent and aromatic.
  3. Add the Veggies: Toss in the diced carrots and celery. Stir everything together and let it cook for another 5 minutes.
  4. Pour in the Tomatoes and Broth: Add the can of diced tomatoes (with their juice) and the beef broth. Give it a good stir!
  5. Mix in the Beans and Corn: Gently fold in the kidney beans and corn, ensuring they’re well incorporated.
  6. Season and Simmer: Sprinkle in the chili powder, salt, and pepper to taste. Bring the soup to a boil, then reduce the heat and let it simmer for about 20-30 minutes.
  7. Taste Test: About 10 minutes before serving, taste the soup. Adjust any seasoning as needed.
  8. Serve it Up: Once the flavors are harmonious and the soup is steaming, you’re ready to serve!
