Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. Combine the wet ingredients: In another bowl, mix the canned pumpkin, vegetable oil, 2 eggs, and 1 teaspoon of vanilla extract.
  4. Fold them together: Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  5. Prepare the cream cheese filling: In a separate bowl, beat together the softened cream cheese, 1/4 cup sugar, 1 egg, and 1 teaspoon vanilla extract until smooth.
  6. Layer the mixtures: Transfer half the pumpkin batter to the prepared loaf pan, dollop the cream cheese mixture over it, and pour the remaining pumpkin batter on top.
  7. Bake for about 60-70 minutes until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Cool in the pan for about 20 minutes before transferring to a wire rack.
