Ham and Potato Corn Chowder

A warm and hearty chowder featuring smoky ham, creamy potatoes, and sweet corn, perfect for cozy evenings.

  • 4 strips bacon
  • 1/2 medium onion, chopped
  • 2 sticks celery, chopped
  • 1/4 cup all-purpose flour
  • 2 cloves garlic, minced
  • 4 cups chicken broth or stock
  • 1 cup heavy (or whipping) cream
  • 2 cups frozen corn
  • 1 pound smoked ham, chopped
  • 2 large Russet potatoes, peeled and diced
  • 1/4 teaspoon Italian seasoning
  • 1 pinch cayenne pepper (optional)
  • Salt and pepper, to taste

Instructions

  1. Cook the bacon: Start by placing the bacon strips in a large pot over medium heat. Cook until they’re crispy, about 5-7 minutes. Transfer to a paper towel-lined plate and set aside, leaving the drippings in the pot.
  2. Sauté the vegetables: Add the chopped onion and celery to the drippings. Sauté for 4-5 minutes until softened.
  3. Add garlic and flour: Toss in the minced garlic and stir for another minute. Sprinkle in the flour and cook for 1 minute.
  4. Incorporate the broth: Gradually pour in the chicken broth while stirring to avoid lumps. Bring to a gentle boil, then reduce to a simmer.
  5. Add the potatoes and corn: Toss in the diced potatoes and frozen corn. Simmer for 15-20 minutes or until potatoes are fork-tender.
  6. Stir in ham and cream: Once the potatoes are tender, stir in the chopped smoked ham and heavy cream. Let simmer for another 5 minutes.
  7. Season and serve: Add Italian seasoning, cayenne pepper, and salt and pepper to taste. Serve hot, garnished with crumbled bacon.
