Creamy Jalapeño Popper Soup

  • 2 boneless, skinless chicken breasts or thighs
  • 2 fresh jalapeños, diced
  • 8 oz cream cheese
  • 4 slices of bacon, chopped
  • 4 cups low-sodium chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 cup heavy cream
  • Olive oil for sautéing

Instructions

  1. Sauté the aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add diced onions and sauté until soft and translucent, about 5 minutes. Add minced garlic and sauté for another minute.
  2. Add the chicken: Toss in your chicken and brown for about 5-7 minutes until no longer pink.
  3. Sprinkle in your spices: Add paprika, cumin, and pepper to coat the chicken.
  4. Incorporate the jalapeños: Add diced jalapeños and cook with the chicken for another 2-3 minutes.
  5. Pour in the broth: Bring to a gentle boil, then reduce heat and simmer for 15 minutes.
  6. Add the creaminess: Stir in the cream cheese until melted, then add heavy cream.
  7. Garnish and serve: Ladle into bowls, garnishing with crispy bacon and fresh herbs.

Notes

Feel free to adjust spices to taste. This soup can be made ahead and freezes well; add cream after reheating.
