Creamy Jalapeño Popper Soup

A comforting soup that combines the zesty kick of jalapeños with the creamy richness of cheese and savory bacon.

  • 1 lb Chicken (boneless, skinless breasts or thighs)
  • 23 Jalapeños, chopped
  • 8 oz Cream Cheese
  • 46 slices Bacon
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 1 cup Cream
  • 1 cup Cheddar Cheese, shredded
  • Cilantro (for garnish)

Instructions

  1. Cook the Bacon: In a large pot over medium heat, cook the bacon until crispy, about 6-8 minutes. Remove the bacon and let it drain on paper towels.
  2. Sauté the Veggies: In the same pot, using the bacon grease, add the diced onion and cook until softened, about 4 minutes. Toss in the minced garlic and chopped jalapeños, cooking for another 2-3 minutes until fragrant.
  3. Add the Chicken: Now, add the chicken pieces to the pot along with the chicken broth. Bring it to a boil, then reduce the heat and let it simmer for about 20 minutes until the chicken is cooked through.
  4. Shred the Chicken: Once cooked, remove the chicken from the pot, shred it with two forks, and return it to the pot.
  5. Make It Creamy: Add the cream cheese and stir until it’s melted and incorporated. Then pour in the heavy cream and stir until combined.
  6. Add the Cheese: Mix in the shredded cheddar until it melts into the soup, creating that dreamy texture. Season with salt and pepper to taste.
  7. Crisp Up the Bacon: Crumble the reserved crispy bacon and sprinkle it into the soup, saving some for garnish.
  8. Blend (Optional): For a smooth version, you can use an immersion blender to blend partially or make it completely smooth.

Notes

For a vegetarian version, replace chicken with chickpeas and use vegetable broth. You can also experiment with different cheeses for a unique twist.
