Loaded Baked Potato Soup

A comforting and creamy loaded baked potato soup with the perfect blend of potatoes, cheese, and garnishes, perfect for chilly evenings.

Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1/2 cup of chopped onion
  • 3 cloves of garlic, minced
  • 4 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of sour cream
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Cooked bacon bits for garnish

Instructions

  1. Prep your ingredients by washing and dicing the potatoes, chopping the onion, and mincing the garlic.
  2. Sauté the chopped onion in a pot with olive oil until translucent, then add garlic and sauté until fragrant.
  3. Cook the diced potatoes with broth, bring to a boil, then simmer until fork-tender.
  4. Blend the soup with an immersion blender until creamy, leaving some chunks for texture.
  5. Add the heavy cream and shredded cheddar cheese, stirring until the cheese melts.
  6. Season with salt and pepper to taste.
  7. Serve in bowls, garnishing with sour cream, green onions, and bacon bits.

Notes

This soup can be made ahead of time and tastes even better the next day. It can also be frozen for about 3 months.
