  • 12 oz bowtie (farfalle) pasta
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped, oil-packed, drained
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup Parmesan cheese, grated
  • 2 tbsp olive oil or butter
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes, optional
  • Salt and black pepper, to taste
  • Fresh basil or parsley, chopped, for garnish

Instructions

  1. Cook the pasta: Start by boiling a large pot of salted water. Add in the bowtie pasta and cook according to package instructions until al dente, about 10-12 minutes. Reserve about a cup of pasta water before draining.
  2. Sauté the chicken: In a large skillet over medium-high heat, add olive oil or butter. Once hot, add the thinly sliced chicken and season with salt, black pepper, and Italian seasoning. Cook until golden brown, about 6-7 minutes.
  3. Add garlic and sun-dried tomatoes: Reduce heat to medium and add minced garlic. Sauté for about one minute until fragrant, then toss in the sun-dried tomatoes.
  4. Create the creamy sauce: Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and Parmesan cheese until melted and creamy. Adjust consistency with reserved pasta water if needed.
  5. Combine pasta and sauce: Once the sauce has reached the desired consistency, add the cooked pasta and toss together until well-coated.
  6. Finish with freshness: Stir in the chopped fresh basil or parsley just before serving.
