White Chicken Chili

A simple, comforting, and delicious white chicken chili that’s perfect for any occasion.

Ingredients

  • 1 lb Chicken (boneless, skinless)
  • 1 can White beans (Great Northern, cannellini, or navy beans)
  • 1 can Green chiles (canned, mild or hot)
  • 1 Onion (sweet onion)
  • 1 tsp Ground cumin
  • 4 cups Chicken broth (or vegetable broth)
  • Olive oil (for cooking)
  • Salt and pepper (to taste)
  • Optional: Heavy cream or Greek yogurt (for creaminess)
  • Optional: Lime juice (for seasoning)

Instructions

  1. Cook the chicken: Season with salt and pepper, then cook in olive oil over medium heat until golden brown. Remove and shred or chop.
  2. Sauté the onion: Add to the same pot with a pinch of salt and cook until soft.
  3. Add the green chiles and cumin: Stir in and cook for another minute to release aromas.
  4. Combine everything: Add chicken broth, shredded chicken, and drained beans. Simmer for 20-25 minutes.
  5. Optional – Make it creamy: Stir in cream or yogurt if desired.
  6. Taste and adjust for seasoning, adding lime juice if desired.
  7. Finish and serve: Ladle into bowls and top with garnishes!

Notes

Garnish with cilantro, a dollop of sour cream, or lime juice. Serve with cornbread or tortillas.
