Irresistibly Crunchy Garlic Parmesan Roasted Zucchini

Crispy, cheesy, and utterly delightful roasted zucchini infused with garlic and Parmesan.

  • 4 medium zucchinis, sliced into 1/4-inch thick rounds
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare a rimmed baking sheet lined with parchment paper.
  3. Wash the zucchinis under cold water, then slice them into 1/4-inch thick rounds.
  4. Toss the sliced zucchini with olive oil in a large mixing bowl.
  5. Add minced garlic, Italian seasoning, salt, and black pepper to the zucchini and toss again.
  6. Spread the seasoned zucchini rounds in a single layer on the baking sheet.
  7. Sprinkle grated Parmesan cheese generously over the top.
  8. Roast in the preheated oven for about 20-25 minutes, stirring halfway.
  9. Check for crispiness and a slight browning.
  10. Garnish with fresh parsley before serving.

Notes

For added flavor, drizzle with balsamic glaze or lemon juice before serving. Avoid overcrowding the baking sheet to prevent steaming.
