Crispy Parmesan Crusted Potatoes

These Crispy Parmesan Crusted Potatoes are bursting with flavor and texture, perfect for impressing guests or elevating your weeknight dinner.

  • 2 pounds small potatoes (such as baby Yukon Gold or red potatoes)
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Italian herbs
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (or to taste)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the potatoes under running water to remove any dirt.
  3. In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, dried Italian herbs, black pepper, and salt.
  4. Gradually add the grated Parmesan cheese to the potatoes, tossing as you go.
  5. Line a baking sheet with parchment paper or lightly grease it.
  6. Pop the baking sheet in the preheated oven and roast for about 25-30 minutes.
  7. Once they’re beautifully browned and tender, remove them from the oven and garnish with fresh parsley.

Notes

For a twist, try using garlic-infused olive oil or mix in fresh herbs instead of dried.
