Instructions

  1. Activate the yeast: In a mixing bowl, combine the warm milk and the active dry yeast. Stir briefly and let it sit for about 5-10 minutes until frothy.
  2. Mix wet ingredients: Once frothy, add the melted butter, egg, and vanilla to the bowl. Whisk them together.
  3. Combine with dry ingredients: In a separate bowl, mix 3 cups of the all-purpose flour, sugar, sea salt, cinnamon, and brown sugar. Gradually add this dry mixture to the wet ingredients until combined.
  4. Knead the dough: If sticky, continue to add flour until it forms a soft dough. Turn onto a floured surface and knead for about 5-7 minutes.
  5. Let it rise: Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-1.5 hours or until doubled in size.
  6. Shape the donuts: Punch down the dough, roll it out to ½ inch thick, and cut out the donuts using a cutter.
  7. Second rise: Place shaped donuts on a lined baking sheet, cover with a cloth, and let rise for another 30-40 minutes.
  8. Prepare cinnamon sugar: Mix granulated sugar, brown sugar, and remaining cinnamon in a shallow bowl.
  9. Heat the oil: In a deep pot, heat about 2-3 inches of oil to 350°F.
  10. Fry the donuts: Drop donuts into the hot oil, frying for 1-2 minutes on each side until golden brown.
