  • 1 egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar

  • Assorted fruits (e.g., strawberries, kiwi, blueberries, bananas)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Make the Cookie Crust: Cream together 1/2 cup butter and 1 cup brown sugar until light and fluffy. Add the egg and 1 tsp vanilla, mixing until incorporated. Gradually add 1 cup all-purpose flour until it forms a dough.
  3. Bake the Crust: Spread the dough onto a pizza stone or a greased baking sheet into a 12-inch circle. Bake for 12-15 minutes or until golden around the edges.
  4. Prepare the Cream Cheese Layer: Beat the softened cream cheese until creamy. Add 1/2 cup powdered sugar and the remaining tsp of vanilla, mixing until well blended.
  5. Assemble Your Fruit Pizza: Spread the cream cheese mixture over the cooled crust and arrange assorted fruits on top.
  6. Chill and Serve: Chill in the fridge for about an hour before serving.
