Ingredients

Scale
  • 2 cups diced ham
  • 1 cup dried white beans
  • 2 medium carrots, diced
  • 2 stalks of celery, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Prep the beans: If you’re using dried beans, soak them overnight and rinse well. For canned beans, drain and rinse.
  2. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté for 5-7 minutes until softened.
  3. Add the garlic: Stir in minced garlic and cook for 1 minute until fragrant.
  4. Incorporate the ham: Add diced ham and stir for another 3-4 minutes.
  5. Combine the beans and broth: Add soaked or canned beans and broth. Scrape the pot bottom to release flavor bits.
  6. Season and simmer: Sprinkle in thyme, bring to a boil, then reduce heat and simmer for 30-40 minutes.
  7. Taste and adjust: Adjust seasonings as needed.
  8. Serve: Ladle into bowls and enjoy!
