Magic Lemon Custard Cake

A delightful cake that combines a zesty lemon flavor with the comforting textures of custard and cake, perfect for any occasion.

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups milk
  • 1 cup all-purpose flour
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking dish with butter or non-stick spray.
  3. Whisk the eggs and sugar until pale and frothy.
  4. Add the melted butter slowly while whisking.
  5. Incorporate the milk, lemon juice, zest, and vanilla extract.
  6. Sift in the flour and salt, folding gently.
  7. Pour the batter into the prepared baking dish.
  8. Bake for about 45–50 minutes until golden brown.
  9. Cool at room temperature for 15 minutes, then refrigerate for at least 2 hours.
  10. Serve chilled, dusting with powdered sugar if desired.

Notes

Better when made a day in advance. This cake improves as it sits.
