Lemon Pizza

A delightful marriage of zesty lemon, creamy cheese, and fresh herbs that will elevate your pizza night.

Ingredients

  • 1 ball Easy pizza dough (or store-bought)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 5 oz fresh mozzarella, torn
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon fresh parsley, for garnish
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 475°F (245°C).
  2. Prep your dough by letting store-bought sit at room temperature or rolling out homemade dough.
  3. Brush the rolled-out dough generously with olive oil.
  4. Mix together grated garlic, lemon zest, lemon juice, parsley, salt, and black pepper, and spread on the dough.
  5. Add pieces of fresh mozzarella evenly on top.
  6. Sprinkle with grated Parmesan cheese.
  7. Bake for about 10-12 minutes until cheese is bubbly and golden.
  8. Finish with a drizzle of lemon juice and a sprinkle of fresh parsley.
  9. Slice and serve immediately!

Notes

This pizza pairs well with a light salad and a chilled white wine.
