Warm, Zesty Lemon Rolls

Delightfully soft and fluffy lemon rolls packed with bright lemon flavor, perfect for brunch or an afternoon treat.

  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 packet instant yeast (about 2 1/4 teaspoons)
  • 3/4 cup warm milk
  • 1/4 cup melted butter
  • 1 egg
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice (for icing)
  • 1 tablespoon milk (for icing)

Instructions

  1. Activate the yeast: In a small bowl, combine the warm milk with the instant yeast and a pinch of sugar. Let it sit for about 5-10 minutes until it’s frothy.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the flour, sugar, and salt.
  3. Combine wet ingredients: Add the melted butter, egg, lemon zest, and lemon juice to the dry ingredients. Pour in the activated yeast mixture.
  4. Knead the dough: Combine everything until it comes together and knead for about 5-7 minutes until smooth.
  5. First rise: Place the dough in a greased bowl and let it rise for about 1 hour, or until doubled.
  6. Prepare the filling: Mix sugar, lemon juice, and lemon zest for the filling.
  7. Shape the rolls: Roll out the dough, spread the filling, and roll it tightly.
  8. Cutting: Cut the log into 1-inch thick pieces and arrange in a greased baking dish.
  9. Second rise: Let rolls rise for another 30-40 minutes.
  10. Bake: Preheat oven to 350°F (175°C) and bake for 20-25 minutes.
  11. Make the icing: Whisk powdered sugar, lemon juice, and milk until thick but spreadable.
  12. Drizzle the icing on top of the rolls once they cool enough to touch.

Notes

These rolls can be made ahead of time and refrigerated overnight before baking. For a less sweet glaze, reduce powdered sugar or substitute with maple syrup.
