Cheeseburger Soup

A heartwarming mashup that combines the classic flavors of a cheeseburger with the creamy goodness of a soup, perfect for busy weeknights.

  • 1 lb ground beef
  • 2 medium potatoes (diced)
  • 2 carrots (sliced)
  • 1 cup cheddar cheese (shredded)
  • 2 cups milk
  • 1/4 cup onion (finely chopped)
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • Seasoning: salt, pepper, and a pinch of cayenne

Instructions

  1. Sauté your base by heating the olive oil in a large pot over medium heat. Add the finely chopped onions and sauté for about 3-4 minutes until they become translucent.
  2. Brown the beef by adding the ground beef to the pot. Use a wooden spoon to break it up and cook until browned, about 5-7 minutes. Season with salt and pepper.
  3. Add the diced potatoes and sliced carrots to the pot, stirring to coat them in the beef and onion mixture.
  4. Pour in the beef broth and milk, bringing everything to a simmer over medium-low heat.
  5. Let it simmer for 15-20 minutes until the potatoes are fork-tender, stirring occasionally.
  6. Cheese it up by removing the pot from heat and gradually stirring in the shredded cheddar.
  7. Taste and adjust seasoning as needed.

Notes

Serve topped with fresh herbs and extra cheese alongside crusty bread or biscuits. Can be made ahead and refrigerated or frozen, but texture may change.
