  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (Cheddar, mozzarella, or a blend)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup bell peppers, diced (optional)
  • 1/2 cup onions, diced (optional)
  • Salt and pepper, to taste
  • Sour cream and salsa for serving

Instructions

  1. Prep your ingredients: Start by gathering all your ingredients. Shred your cooked chicken and chop your veggies if you’re using them.
  2. Heat the pan: In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
  3. Sauté the veggies: If you’re including your peppers and onions, toss them into the pan first and sauté for about 3-4 minutes.
  4. Mix in the chicken: Once your veggies are tender, add the shredded chicken to the pan and stir it all together.
  5. Assemble the quesadilla: On a clean surface, lay out one flour tortilla, spoon a generous amount of the chicken and veggie mixture on one half, then sprinkle with cheese.
  6. Cook the quesadillas: Wipe the skillet clean, return it to medium heat, and lightly grease it with olive oil.
  7. Cut and serve: Once golden and crispy, transfer your quesadilla to a cutting board and slice into wedges.
