Creamy Garlic Sauce Baby Potatoes

  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prep the potatoes: Rinse the baby potatoes under cold water. Place in a pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook for about 12-15 minutes until fork-tender.
  2. Sauté the garlic: Heat the butter in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Make the cream sauce: Pour in the heavy cream and stir to combine. Bring to a gentle simmer, and add salt and pepper to taste.
  4. Add the cheese: Stir in the grated Parmesan cheese until melted and combined.
  5. Combine it all: Drain the potatoes and add them to the skillet, tossing gently until coated in the sauce. Let simmer for an additional minute.
  6. Garnish and serve: Sprinkle fresh parsley over the potatoes and serve hot.

For a vegan option, substitute butter and heavy cream with coconut oil and coconut cream.
