Pumpkin Spice Poke Cake

  • 1 can (15 oz) pumpkin puree
  • 1 cup water
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 cup sweetened condensed milk
  • 1 ½ cups cream cheese frosting
  • 1 tsp cinnamon (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish by greasing and flouring it.
  3. Mix the spice cake mix, pumpkin puree, water, vegetable oil, and eggs in a large mixing bowl until moistened; then mix on medium speed for about 2 minutes.
  4. Pour the batter into your prepared baking dish, spreading it evenly.
  5. Bake for 25-30 minutes until a toothpick comes out clean.
  6. Poke holes in the cake with a wooden skewer after cooling for 10-15 minutes.
  7. Pour sweetened condensed milk evenly over the cake and let it soak for at least 30 minutes.
  8. Frost the top with cream cheese frosting.
  9. Garnish with a sprinkle of cinnamon.
  10. Chill in the fridge for an hour before serving.

Notes

For a lighter option, consider using evaporated milk. Variations include adding chocolate chips or swapping sweetened condensed milk for maple syrup.
