Classic Cucumber Feta Salad

A refreshing summer salad made with fresh cucumbers, crumbled feta cheese, and herbs.

Ingredients

  • 3 medium English cucumbers
  • 1 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion (optional)
  • 2 tablespoons chopped fresh dill or mint
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 medium lemon (about 2 tablespoons)
  • 1 small garlic clove, minced
  • Salt and pepper to taste
  • Optional: pinch of crushed red pepper flakes
  • Optional: drizzle of honey

Instructions

  1. Prepare the cucumbers: Start by washing your cucumbers thoroughly. Slice them thinly using a sharp knife or a mandolin for uniformity. Set them aside in a large mixing bowl.
  2. Add the onion (if using) to the bowl with the cucumbers.
  3. Mix in the feta cheese over the cucumbers and onion.
  4. Chop the fresh dill or mint and add to the salad.
  5. Make the dressing by whisking together olive oil, lemon juice, minced garlic, salt, and pepper.
  6. Combine everything by drizzling the dressing over the salad and gently tossing.
  7. Taste and adjust seasoning as needed.
  8. Chill in the fridge for about 30 minutes.

Notes

Great for summer picnics and pairs well with grilled meats.
