Creamy Chicken Gnocchi Soup

A warm bowl filled with tender chicken, pillowy gnocchi, and veggies in a creamy broth.

Ingredients

  • 1 lb Boneless, skinless chicken breasts or thighs
  • 16 oz Potato Gnocchi
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 4 cups Chicken broth
  • 2 cups Fresh or frozen spinach
  • 1 cup Heavy cream
  • 1 tbsp Olive oil
  • Salt and pepper, to taste

Instructions

  1. Prep the ingredients by chopping your veggies and dicing the chicken.
  2. Sauté the chicken in olive oil, seasoning with salt and pepper, until golden brown (5-7 minutes).
  3. Add the chopped carrots and celery, sautéing for another 4-5 minutes.
  4. Create the base by pouring in chicken broth and bringing it to a simmer.
  5. Add the potato gnocchi and cook until they float to the top (2-3 minutes).
  6. Stir in the cream and spinach, letting it wilt for about a minute.
  7. Taste and adjust seasoning as needed.
  8. Serve in bowls, garnished with fresh herbs and a drizzle of olive oil.

Notes

Great with a crusty loaf of bread for dunking. Experiment with different veggies or proteins as desired.
