Double Chocolate Muffins

Decadent double chocolate muffins with melted chocolate chips, perfect for any occasion.

  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by lining it with paper liners or greasing it lightly.
  3. Mix dry ingredients: in a large mixing bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. Combine wet ingredients in another bowl: whisk eggs and sugar until fluffy, then add buttermilk, vegetable oil, and vanilla extract.
  5. Combine both mixtures by pouring the wet mixture into the dry ingredients and gently folding.
  6. Add chocolate chips and fold them in with care.
  7. Fill the muffin tins about two-thirds full with batter.
  8. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out with a few moist crumbs.
  9. Cool the muffins in the tin for 5 minutes then transfer to a wire rack.

Notes

For variations, consider adding mint extract, nuts, or fruits to customize your muffins!
