One-Pan Beef Enchiladas

A deliciously simple and satisfying One-Pan Beef Enchiladas packed with flavor and made for easy cleanup.

  • 1 lb lean ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 small corn or flour tortillas
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven: Set your oven to 375°F (190°C).
  2. Sauté the aromatics: In a large oven-safe skillet over medium heat, add a splash of oil and toss in the diced onions and bell pepper. Cook for 4-5 minutes until they are soft and fragrant.
  3. Cook the beef: Increase the heat to medium-high, and add the ground beef to the pan. Cook until fully browned, roughly 6-8 minutes.
  4. Add the beans and corn: Stir in the drained black beans and corn, mixing everything until well combined. Let it cook for an additional 2-3 minutes.
  5. Assemble the enchiladas: Spread about ½ cup of enchilada sauce evenly across the bottom of the skillet. Fill each tortilla with about ⅓ cup of the beef mixture, roll, and place seam-side down in the skillet.
  6. Top with sauce and cheese: Pour the remaining enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top.
  7. Bake to perfection: Slide your skillet into the preheated oven and bake for 20-25 minutes or until the cheese is fully melted and bubbly.

Notes

Feel free to substitute ground beef with ground turkey or a mix of sautéed vegetables for a vegetarian version.
