Chicken Marsala Pasta

A comforting yet elegant dish featuring tender chicken, savory mushrooms, and a rich Marsala wine sauce tossed with pasta.

  • 8 oz. pasta (fettuccine or penne)
  • 2 tablespoons olive oil
  • 1 lb. boneless, skinless chicken breasts, sliced
  • 1 cup mushrooms, sliced (preferably cremini or button)
  • 2 cloves garlic, minced
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Cook the pasta: In a large pot of boiling salted water, cook 8 ounces of pasta until al dente, about 8-10 minutes. Save about 1 cup of the pasta water before draining.
  2. Sauté the chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the sliced chicken, season with salt and pepper, and sauté for about 5-6 minutes until golden brown. Remove chicken and set aside.
  3. Cook the mushrooms: Add the sliced mushrooms to the same skillet and sauté for 4-5 minutes until golden and tender.
  4. Add garlic: Toss in the minced garlic and sauté for about 1 minute.
  5. Deglaze with Marsala wine: Pour in the Marsala wine, scraping the bottom of the skillet. Simmer for about 2-3 minutes until it reduces slightly.
  6. Add chicken broth and cream: Pour in the chicken broth and heavy cream, stirring to combine. Let it simmer for another 5 minutes until thickened.
  7. Season it up: Add Italian seasoning, plus salt and pepper to taste.
  8. Combine chicken and pasta: Return the cooked chicken to the skillet, stirring to coat in the sauce. Add the drained pasta and a splash of reserved pasta water if needed.
  9. Plate and garnish: Serve the pasta topped with freshly chopped parsley and optional Parmesan cheese.

Notes

Try adding veggies like spinach or cherry tomatoes, or make it spicy with red pepper flakes. For a vegetarian option, swap chicken for veggies like eggplant or zucchini.
