French Onion Chicken Orzo Casserole

A cozy comfort meal that combines the rich flavors of French onion soup with creamy orzo and tender chicken, perfect for weeknight dinners.

  • 1 tablespoon olive oil
  • 2 large yellow onions (thinly sliced)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 3 garlic cloves (minced)
  • 1 1/2 cups orzo pasta
  • 2 cups cooked shredded chicken
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Optional: 1/2 teaspoon Worcestershire sauce or balsamic glaze

Instructions

  1. Caramelize the onions: In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions, sugar, and salt. Cook for about 20-25 minutes until golden brown.
  2. Add garlic: Once onions are caramelized, add minced garlic and cook for another 1-2 minutes.
  3. Combine ingredients: In a mixing bowl, combine cooked onions, garlic, orzo, shredded chicken, thyme, black pepper, remaining broth, and cream.
  4. Transfer to a casserole dish: Grease a 9×13-inch dish and pour the mixture into it, spreading evenly.
  5. Cheese it up: Sprinkle mozzarella and Parmesan over the top.
  6. Bake: Preheat oven to 375°F (190°C) and bake for 25-30 minutes until cheese is melted and bubbly.
  7. Rest a bit: Let it rest for 5-10 minutes before serving.
