Garlic Herb Chicken

Succulent chicken breasts coated in a savory garlic herb mixture, seared to golden perfection, and finished in a rich buttery broth.

Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2 pounds russet potatoes
  • ½ cup heavy cream
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar

Instructions

  1. Prep the chicken: Pat your chicken breasts dry with paper towels and season with salt and pepper.
  2. Heat the oil: In a skillet over medium-high heat, add the olive oil and let it heat until shimmering.
  3. Sear the chicken: Add the chicken breasts and sear for 6-7 minutes on each side until cooked through and golden.
  4. Make it flavorful: Remove the chicken and cook the minced garlic in the skillet until fragrant.
  5. Create the base: Add the butter to melt, then pour in chicken broth and deglaze the pan.
  6. Introduce freshness: Stir in the fresh herbs, brown sugar, and balsamic vinegar, simmering for 2-3 minutes.
  7. Return the chicken: Nestle the chicken back in the skillet and cover, simmering for another 5 minutes.
  8. Creamy finish: Turn off the heat and stir in the heavy cream, adjusting seasoning as needed.

Notes

If you have leftover chicken, chop it up for a delightful salad. Adjust garlic to taste for flavor balance.
