Kielbasa Sausage Cheesy Potato Casserole

A comforting casserole filled with smoky kielbasa, creamy potatoes, and melted cheese, perfect for family gatherings.

  • 1 lb (450 g) smoked kielbasa sausage, sliced into ½-inch pieces
  • 1 bag (32 oz / 900 g) frozen diced hash brown potatoes, thawed
  • 1 can (10.5 oz / 295 g) cream of chicken soup (or cream of mushroom)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • ½ cup chopped green onions (or white onion sautéed)
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons butter (melted)
  • Optional: 1 cup crushed cornflakes or Ritz crackers for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the onions if using white onion with melted butter until translucent.
  3. Mix the hash browns, kielbasa, cream of chicken soup, sour cream, sautéed onions, 1 cup of cheddar cheese, garlic powder, black pepper, and paprika in a large bowl.
  4. Transfer the mixture into a greased 9×13 inch dish, spreading it evenly.
  5. Add the crushed cornflakes or crackers topping if desired and mix with melted butter.
  6. Bake uncovered for 45-50 minutes, check halfway and cover if browning too much.
  7. Sprinkle the remaining cheddar cheese on top in the last 10 minutes for melting.

Notes

Feel free to substitute kielbasa with sautéed mushrooms or lentils for a vegetarian version, or add jalapeños for a spicy kick.
