Texas Roadhouse Smothered Chicken

Tender chicken breasts smothered in sautéed mushrooms and onions, drenched in zesty BBQ sauce, and topped with gooey cheddar cheese.

  • 4 boneless, skinless chicken breasts
  • 1 cup sliced mushrooms
  • 1 cup diced onions
  • 1 cup shredded cheddar cheese
  • 1 cup BBQ sauce
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Prep your chicken: Pat the chicken breasts dry and season with salt and pepper.
  2. Sear the chicken: Heat 1 tablespoon of olive oil in a skillet and sear the chicken for 5-7 minutes on each side.
  3. Cook the onions and mushrooms: Remove chicken, add remaining olive oil, sauté onions and mushrooms for 5 minutes.
  4. Mix in the BBQ sauce: Pour BBQ sauce into the skillet, stir, and let it simmer for 2 minutes.
  5. Return the chicken to the skillet: Nestle chicken back into sauce and cook for another 5 minutes.
  6. Time for cheesy goodness: Sprinkle cheddar cheese on top and cover until melted, about 3-4 minutes.
  7. Serve it up: Transfer to a serving platter and drizzle with remaining sauce.

Notes

Serve with creamy mashed potatoes or roasted vegetables for a complete meal.
