Cozy Broccoli Cheddar Soup

A warm and inviting cream-based soup filled with vibrant broccoli and rich cheddar cheese, perfect for chilly days.

Ingredients

  • Fresh Broccoli: About 4 cups of broccoli florets
  • Carrots: 2 medium-sized, diced
  • Cheddar Cheese: 2 cups of sharp cheddar cheese, shredded
  • Heavy Cream: 1 cup
  • Onion: 1 medium onion, chopped
  • Garlic: 2 cloves, minced
  • Vegetable or Chicken Broth: 4 cups
  • Salt and Pepper: To taste

Instructions

  1. Prep your veggies: Wash and chop all your vegetables.
  2. Sauté the aromatics: In a large pot or Dutch oven over medium heat, add a splash of olive oil. Toss in the chopped onions and sauté until they’re translucent, about 5 minutes. Add the minced garlic and cook until fragrant, about a minute.
  3. Add carrots and broccoli: Stir in the diced carrots and broccoli florets. Let them cook for another 5 minutes.
  4. Pour in the broth: Reduce the heat to low and pour in the vegetable or chicken broth. Stir gently and bring to a simmer. Allow to cook for about 15-20 minutes.
  5. Blend it up: Once the veggies are soft, blend the soup until it reaches your desired consistency.
  6. Stir in the cream and cheese: Return the blended soup to the pot, and over low heat, stir in the heavy cream. Allow to warm through before adding in the shredded cheddar cheese, stirring until melted.
  7. Season to taste: Give it a taste and add salt and pepper as needed.

Notes

For a lighter version, substitute heavy cream with whole milk or a plant-based alternative. Feel free to customize with spices or extra ingredients like cooked chicken or greens.
