Creamy Broccoli Potato Soup

A heartwarming and creamy soup perfect for chilly days, featuring fresh broccoli and potatoes.

  • 4 cups fresh broccoli florets
  • 2 medium Yukon Gold or Russet potatoes, diced
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup heavy cream

Instructions

  1. Prep the ingredients: Wash and chop the broccoli into small florets, dice the potatoes, and finely chop the onion and garlic.
  2. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add onions and sauté for 3-4 minutes, then add minced garlic and sauté for an additional minute.
  3. Build the base: Add the diced potatoes and broccoli florets to the pot and toss with the onion and garlic.
  4. Add the broth: Pour in vegetable broth to cover the vegetables and bring to a gentle boil. Reduce to a simmer and cover for 15-20 minutes until tender.
  5. Blend for creaminess: Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a regular blender in batches.
  6. Add cheese and cream: Stir in shredded cheese and cream until melted and well combined.
  7. Season to perfection: Taste and adjust seasoning with salt and freshly cracked pepper if needed!
  8. Serve it up: Ladle into bowls and enjoy!
